Ripe plantain will give all the necessary vitamins and minerals and some calorific values except vitamin A and C. It can be eaten fried or baked. Locally, it is mostly eaten fried with black eyed beans stew or Bambara beans. The very soft ones can be used to prepare ‘eto’ or ‘kakro’ (both local dishes).
